The recipe for “passadei”

Over the years, the stale bread has been replaced by breadcrumbs, the hardened cheese by grated Grana Padano, and nutmeg is preferred over lemon rind.

Take some time to prepare the dish and enjoy it with your loved ones.

Ingredients for 4 people:

150gr. of grated parmesan cheese

150gr. of breadcrumbs

3 eggs

nutmeg

salt

For the broth:

onion

carrot

capon

beef muscle

beef bone

parmesan rind

celery

herbs of your choice (peppercorns, cloves…)

Preparation of the passatelli

Mix the eggs with the cheese, breadcrumbs, salt and a little grated nutmeg until the mixture is smooth.

Cut it into pieces about 3 cm high and press them through the specific tool, dropping the passatelli directly into the boiling meat broth. They are cooked in less than 5 minutes.

Serve them in the hot broth. Enjoy your meal!
